BEST EVER CHOCOLATE CAKE


Chocolate cake A lovely moist rich dark chocolate cake recipe.

180ml sunflower oil
eggs 4-5 medium eggs
(preferably free range. If you are thinking of keeping your own chickens learn how on one of Haven Smallholding 's courses, held canalside).
170g soft brown sugar
200g dark brown sugar
200g wholemeal self raising flour
1.1/2 tsps bicarbonate of soda
75g cocoa powder
200mls boiling water
Whipping cream
Black cherry jam

Mix together oil, sugar and eggs, then stir in flour.
Boil the kettle. Mix the cocoa powder and bicarb, and add the hot water to create a chocolate volcano. This bit is fun, but make sure you use a big enough bowl.
Stir both mixtures together. The cake mixture should at this stage be more liquid than you may be expecting. Don't worry, pour it in to 2 x 7inch tins and bake at Gas 5-6 until cooked.
Make sure you do not over cook it. When baked turn out and cool.

This makes a wonderfully moist sponge, perfect for a Peak Forest Gateau, sandwiched together with whipped cream and black cherry jam. Alternatively use chocolate butter icing and sprinkle the top with icing sugar.
